It's a very unstable compound that's usually made in long-chain molecules to make it more stable. Ammonium phosphates are divided into two types: di-ammonium phosphate (DAP) and mono-ammonium phosphate (MAP). The fertiliser di-ammonium phosphate (DAP) is a great source of phosphorus (P) and nitrogen (N) for agricultural nutrition. Since DAP is highly soluble, it dissolves readily in the soil, releasing phosphate and ammonium. It also acts as a fire retardant. To keep a forest from burning, a mixture of Di-ammonium phosphate and other ingredients should be sprayed ahead of time. Dry chemical fire extinguishers widely used in schools, hospitals, and homes use Mono-Ammonium Phosphate (MAP). Powdered MAP is dispersed by these sprays, which coats the fuel and quickly extinguishes the flames. Mono-ammonium phosphate is used in cheese starter cultures, distilled spirits, beer and wine, yeast, and bread, among other things. MAP is used as a food additive and emulsifier in the food and beverage industry.
